My father made sure my brothers and I were exposed to wordlwide flavors and smells of food including chocolate and we discussed the flavor, the texture, method of preparation. Our family treats food seriously

Fifty years of discernning choices in selection of chocolate have made me a knowledgable gourmet. I spend a lot of time debating issues of quality, such as how various blends of Cocao beans will change a piece or how differences in processing will affect flavor, texture, smell or mouth feel. As a Dutchman my chocolate hertitage is also a matter of national pride with names such as Droste, Van Houten, and Verkade.
