2 PIECE BONELESS  CHUCK

PRODUCT DESCRIPTION: Thin item consists of the boneles bled and the 114 shoulder clod. The tail of the boneless blade will not exceed 5". The shoulder clod is removed from the chuck prior to saw breaks. All bones, backstrap, cartilage are removed.

TRIM SPECIFICATION: Fat on the should clod is 1/2" bevel with 3/4" overall.

DEFECTS: Heavy tendons not flush withthe lean sweetbreads, bloodclots, cartilage, loose and dried porting all to be removed (Military specs includes removal of the prescapular lumph gland.;

BREAK DEFECTS: Indentation from removal of apple bone exceeding 3" deep. Evidence of less or more than 5 ribboned, blade must be within IN of square.
