CLOD

PRODUCT DESCRIPTION: The clod is made from the chuck primal prior to any saw breaks. Starting with a knife mark on the ridge of the paddle bone (scapula) it is cut along the arm bone to the elbow joint following the natural seam back to the fifth rib. Clod is then separated from the chuck by following the natural seam between the clod, arm and paddle bone.

TRIM SPECIFICATION: Fat cover is 3/4" overall with a 1/2" bevel. Remove heavy cartilage and tendons. Tail is 1 1/2" wide. Web fat must be trimed to show lean. Fat is not trimmed under the rose meat unless specified.
